From what's on hand to what's on your plate: Making the best of store cupboard ingredients on a budget!

Cooking group were faced with a challenge, something a bit different! Ela presented the group with a selection of ingredients that we already had in, what could they make? could they cost it? how did they do it?
So what did we have to work with? kidney beans, chopped tomatoes, eggs, garden peas, red peppers, garlic and some left over tortilla wraps.

West End Shakshuka
Add a small amount of oil to a pan, add the onions and garlic cook until soften then add the kidney beans, tomatoes, peppers cook for a few minutes then add the garden peas and any herbs and spices you wish to use that you may have in your store cupboard, we used paprika, cumin and mixed herbs.
Cook this until all combined and cooked through.
Place the tortillas in a baking dish add the mixture on top, next crack some eggs on the top and place in the oven until the eggs are baked.
This is just what we had in, you can adapt this recipe to whatever you may have in.
It was amazing to find out that the total cost for the ingredients was approximately £7.24 to feed 12 people which is about 61p per person. This just goes to show that you don’t need to break the bank to eat tasty, healthy food.
