The time of year for a glut of courgettes


It’s that time of year and we have a glut of courgettes from the community allotment. As well as using these in our food bank we are also using in our internet café.


If you have any tried and tested courgette recipes please share them with us.


A new recipe we are trying is Herby Courgette soup, as well as using the courgettes we are also using onion, potato, garlic, herbs and carrots grown on the community allotment.


This is the recipe we used


Ingredients

1 tsp oil

2 onions roughly chopped

2 potatoes peeled and roughly chopped into 1cm cubes

2 courgettes quartered and roughly chopped

2 carrots peeled and roughly chopped

2 garlic cloves crushed or sliced thinly

1 pint of vegetable stock

Salt and pepper to taste

Fresh herbs (any that you have we used sage and rosemary)


Method

1. In a pan add the onion, potato, and carrot fry gently on a low heat for 5 – 10 minutes until soft

2. Add the garlic and courgette and cook for a further 5 minutes stirring to combine ensuring nothing sticks

3. Add the stock and herbs and give it a stir. Cover the pan simmering for 10 minutes until everything is cooked through and tender.

4. Add Salt and pepper to taste.

5. Enjoy!
