The International Cooking group kicked off a new season with a Turkish cuisine. We are holding on to summer as long as possible so decided to make a summery dish of salad and a Turkish pastry.
First, we made a Kisir. Kısır is a bulgur-based salad found in Turkish cuisine. It’s among the most beloved of Turkish dishes and is eaten across the country. The main ingredients are finely ground bulgur, parsley, and tomato paste. Common additional ingredients include onion, garlic, olive oil and lemon juice, cucumber, and spices. It can be served with lettuce leaves. It has a reddish colour due to tomato paste mixture. It is served at room temperature as either a side-dish or main appetizer
Next, we made a Turkish Borek. Crisp and rich, borek is a Savoury Turkish pastry often served at breakfast and brunch. Traditionally, it is prepared with Turkish yufka dough, an ultra-thin, unleavened dough made from flour, water, and salt. It’s made by layering ultra-thin dough, an egg mixture, and various fillings. Borek also comes in many shapes and sizes, ranging from cigarette-shaped rolls to large trays.

Guler T: I enjoyed participating in the class. It’s been more than 5 years since I went home to Turkey and I was happy to show people how our meals are being prepared.
Rodney C: I never made anything like that before. At first, the ingredients attracted me, and I knew I had to attend the class. The preparation method was quite different, and I enjoyed the session and the people. I took some cheese and parsley borek fillings home with me so I can make some borek for my daughter and I
Keith B: it was my first session today and I made new friends. The company was nice, the atmosphere was right, and the cooking was new for me.
Razina A: I did not want to join in the cooking session, but the smells and the ingredients made me change my mind. We have similar pastry in Pakistan, but we use them for spring rolls.
Marya: I have been away from the cooking group for some time but am so excited to be back. Never seen a fine bulgur before. I took some home with me to make my own Kisir.
Savina F: I always enjoy the cooking group because of all the different national dishes we cook. Always something new to learn and new tricks to apply to our cooking. I can’t wait for next class.
