Back, back again Cooking Group returns with a Lentil and Veg soup.

West End Centre

The cooking group is back from our break. We have started with a planning session finding out what you want to achieve in the group. We will be revisiting some of our favourite places and trying some new destinations. Looking at using store cupboard items, budget busting, how we can use the Air Fryers and a trip to our Community Allotment to try some outdoor cooking.

Planning out of the way, our special guest Derek joined us and showed us how he makes his budget busting winter warmer Lentil and vegetable soup served alongside sourdough and tiger bread.

Lentils are often overlooked even though they are an inexpensive way of getting a wide variety of nutrients. Lentils are part of the legume family along with beans, peanuts and peas. They can be used for soups, stews, salads and side dishes

Did you know that Lentils are made up of more than 25% protein and this makes them an excellent meat alternative.

The best thing about this lentil soup you can add whatever you want to it, bacon is often a favourite but also any vegetables you have in. It goes a long way and is very cheap to make.

Here is what you told us:

Rodney: its good to be back. I enjoyed it. Learnt a new technique because I have never made my lentils as a soup, I usually use it as a filler.
Susan: Its so nice to get everybody together again after the Christmas break. I have never cooked or worked with lentils before. The soup was amazing, and I will have a go at it some time at home.
Marya: I have looked forward to resuming the sessions with everyone. What a fantastic way to start the new year…. It’s been great and looking forward to other sessions
Savina: enjoyed it. Was surprised that we did not use tomatoes, but Derek also said we can use chicken or bacon or fish. Am going to have a go at it. The session was very chilled out with nice people, and we had fun and shared lots of laughter. The last time I did this was years and years ago, so this was very interesting for me and I completely enjoyed it.

Next week we are travelling to St Lucia with Kathlyn who will be sharing her authentic Jerk Chicken recipe.
