Biryani was on the menu for the cooking group last Friday, and we were being taught the traditional way it is made at home.

We had a good laugh making this dish as a group and learnt about new spices and flavours and how to combine them ... the result was delicious think we all had seconds!! With these ingredients we made a large pan that full fed us all with left overs too, nothing went to waste!

Ingredients

1kg chicken thigh boneless

1 packet of biriyani spice

2 tbs garam masala

1 tbs curry powder

2/3 cups of boiled rice

2 tbs plain yoghurt

4 cloves of garlic

Fresh Coriander

3 onions

2 tomatoes

3 chilli

Method

Slice onion and chop garlic and fry until soft and golden in colour

Add chicken until browned then add the yoghurt mix well

Add garam masala, curry powder, chillies and biriyani spices mix well and leave to cook

After 10 minutes add sliced fresh tomatoes and fresh coriander and leave on low to cook

Wash the rice then boil until soft then drain the water.

Layer the rice first then the chicken then so on until it is all used and serve

Along side this we had a yoghurt salad which was sliced cucumber, tomatoes and onion in plain yoghurt and a salad of cucumber, tomatoes, and peppers.
