Back to the Caribbean with Hugh's Jerk Chicken

It’s Jerk Chicken again, yes we know! It’s one of our favourite dishes and everyone makes theirs slightly differently, today Hugh shared his own recipe for jerk chicken with the cooking group.

Hugh told us when he ran his café he would prepare the chicken the day before and leave it in the fridge overnight to marinate. First job today was to prepare the chicken, Susan and Hugh literally got their hands stuck in and rubbed the chicken with seasoning, onions and garlic.
Sandra , Frances , Christabel and Susan then got busy cutting , slicing and shredding tomatoes, cucumber, lettuce , yellow and green peppers to be served along side the marinated chicken .
Ela made her famous tomato sauce and cooked boiled rice.
The chicken was cooked in the air fryer then served alongside the rice , salad and sauce.
We all really enjoyed Hugh’s Jerk chicken, with second servings!
Susan liked it so much I am going to make it herself at home.
Christabel said she thought it was very tasty and sucked the chicken bones.
Stephen said the spice on the chicken was just right, very tasty
Sandra and Frances cracked on with the washing up in the kitchen.
All the group thoroughly enjoyed and all got stuck in with preparation, cooking and clearing away and as always shared a few laughs along the way.
All we can say is Gordon Ramsay eat your heart out , cos we have got Hugh !!!!
Why not give it a whirl at home, here is the recipe –
·Wash and score the chicken pieces then place in a deep tray and rub in 3 tablespoons of jerk seasoning, 3 tablespoons of everyday seasoning , half a jar of Dunns River jerk seasoning marinade
·add in two large peeled and diced onions and a finely chopped clove of garlic , massage and cover all pieces of chicken and leave to marinate for a couple of hours.
·When chicken has absorbed the marinade place in the air fryer at 240c on maximum crisp setting for ten minutes (this was based on us cooking 2 kilos of chicken drumsticks in a large airfryer
After ten minutes check the chicken and turn the pieces over and cook for a further ten minutes.
After a further ten minutes again turn and shake the chicken and cook for ten more minutes. the chicken is then ready
If you don’t have an air fryer place the marinated chicken on a baking tray and cook in a gas oven, gas mark 7 for 30 minutes.
However, you choose to cook your jerk chicken enjoy it and tell us how it went!!!!!
Serve along side boiled rice and salad.
