We offer a vegetarian option at our lunch club and today we decided to try something totally new. It went down really well and thought we could share the recipe with you. It's mainly store cupboard ingredients so it's a good one to get out at short notice.

Easy Store Cupboard Vegan Curry
Ingredients
Onion
Tinned Jackfruit in water
Tinned Green Lentils
Tinned Tomatoes
Garlic
Ginger
Chillies (to your own taste)
Garam Masala
Turmeric
Method
Chop onion and gently fry with ginger, garlic. chillies, garam masala and turmeric
Add lentils and tomatoes and simmer
Gently pull pieces of the jackfruit apart and add to the curry
Simmer until cooked
Can be served with chapatti or rice and in my case cauliflower!
